Zuppa Toscana

Description: Justin's Favorite Soup. Still has it for his birthday (in the heat of summer ).
Ingredients
- ½ - 1 lb bacon
- 1 lb Italian sausage
- 1 white onion
- 2 tsp garlic
- ½ tsp crushed red pepper flakes
- 3 large russett potatoes, washed
- 12 c. water
- 1 tsp salt
- 9 chicken bullion cubes (or 3 Tbsp of bullion)
- 1-2 c. heavy cream
- 1 bunch of kale
Instructions
- Cut bacon into bits, cook, and drain grease.
- While bacon cooks, add and cook italian sausage in a large pot (5+ qt preferred), then add onion, garlic, and crushed red pepper flakes. Cook until fragrant.
- Slice potatoes into thin rounds, and add to pot.
- Add water, salt, and bullion, and bring to a boil.
- Cook on high until potatoes are tender.
- Take off heat, add heavy cream and kale
- Serve hot with garlic breadsticks.
