Pork and Peanut Dragon Noodles

Description: Rachel and I love this dish, due to it's flavor. We usually double batch it for leftovers
Ingredients
Dragon Sauce
- ¼ c. soy sauce
- ¼ c. chili garlic sauce
- ¼ c. brown sugar
Pork and Noodles
- ½ lb. ground pork1
- 2 3oz. pkgs ramen noodles (discard the seasoning)
- 3 green onions
- ¼ c. unsalted peanuts

- Mix together the soy sauce, chili garlic sauce, and brown sugar in a small bowl and set aside.
- Brown the ground pork in a skillet over medium heat. Once cooked through, pour in the dragon sauce and add the peanuts. Let it all simmer together for about 5 minutes until the sauce reduces by half.
- While the pork is cooking, boil water and cook the ramen noodles according to the package directions — toss the seasoning packets. Drain and set aside.
- Add the drained noodles to the skillet and toss until everything is coated in sauce. Top with sliced green onions and serve.

Ground pork at around 25% fat works great here and shouldn't need extra oil. If your pork renders a lot of grease, drain most of it and leave about 1 Tbsp in the skillet before adding the sauce. ↩
