Pork and Peanut Dragon Noodles

Description: Rachel and I love this dish, due to it's flavor. We usually double batch it for leftovers


Ingredients

Dragon Sauce

  • ¼ c. soy sauce
  • ¼ c. chili garlic sauce
  • ¼ c. brown sugar

Pork and Noodles

  • ½ lb. ground pork1
  • 2 3oz. pkgs ramen noodles (discard the seasoning)
  • 3 green onions
  • ¼ c. unsalted peanuts

  1. Mix together the soy sauce, chili garlic sauce, and brown sugar in a small bowl and set aside.
  2. Brown the ground pork in a skillet over medium heat. Once cooked through, pour in the dragon sauce and add the peanuts. Let it all simmer together for about 5 minutes until the sauce reduces by half.
  3. While the pork is cooking, boil water and cook the ramen noodles according to the package directions — toss the seasoning packets. Drain and set aside.
  4. Add the drained noodles to the skillet and toss until everything is coated in sauce. Top with sliced green onions and serve.

  1. Ground pork at around 25% fat works great here and shouldn't need extra oil. If your pork renders a lot of grease, drain most of it and leave about 1 Tbsp in the skillet before adding the sauce.
