Bacon Ranch Red Potatoes

Description: Rachel and Justin came across this recipe in a cookbook. Great side to steak or another meaty dish.


Ingredients

  • 4 strips bacon, chopped into small pieces
  • 2 lbs red potatoes
  • 1 Tbsp fresh chopped parsley
  • 1 tsp sea salt
  • 4 cloves garlic, chopped
  • 1-oz packet ranch dressing, seasoning mix
  • ⅓ c. water
  • ½ c. shredded white cheddar
  • 2 Tbsp chopped green onions (as garnish)

Instructions

  1. Set the Instant pot to Sauté, add the bacon to the inner pot, and cook until crisp.
  2. Stir in the potatoes, parsley, sea salt, garlic, ranch dressing/seasoning, and water.
  3. Secure the lid, make sure vent is at sealing, then set the Instant Pot to Manual for 7 minutes at high pressure
  4. When cooking time is up, do a quick release and carefully open the lid.
  5. Stir in the cheese. Garnish with the green onions.
