Bacon Ranch Red Potatoes

Description: Rachel and Justin came across this recipe in a cookbook. Great side to steak or another meaty dish.
Ingredients
- 4 strips bacon, chopped into small pieces
- 2 lbs red potatoes
- 1 Tbsp fresh chopped parsley
- 1 tsp sea salt
- 4 cloves garlic, chopped
- 1-oz packet ranch dressing, seasoning mix
- ⅓ c. water
- ½ c. shredded white cheddar
- 2 Tbsp chopped green onions (as garnish)
Instructions
- Set the Instant pot to Sauté, add the bacon to the inner pot, and cook until crisp.
- Stir in the potatoes, parsley, sea salt, garlic, ranch dressing/seasoning, and water.
- Secure the lid, make sure vent is at sealing, then set the Instant Pot to Manual for 7 minutes at high pressure
- When cooking time is up, do a quick release and carefully open the lid.
- Stir in the cheese. Garnish with the green onions.
