Homemade Granola

Description: Homemade granola that's great as a snack, on yogurt, or as an ice cream topping. Makes about 7 cups and freezes well.
Ingredients
- ¼ c. vegetable oil
- ¼ c. honey
- 1 tsp vanilla
- 4 c. old-fashioned oats
- 1 ½ c. sliced almonds
- ½ c. packed light brown sugar
- ½ tsp salt
- ½ tsp ground cinnamon
- 1 ½ c. raisins or dried cranberries
- 1 c. miniature chocolate chips (optional)
Instructions
- Preheat the oven to 300°F and have a 15x10 rimmed baking sheet ready.
- Melt the oil and honey together in a saucepan over low heat, stir to combine, then whisk in the vanilla. Remove from heat.
- In a large bowl, mix together the oats, almonds, brown sugar, salt, and cinnamon. Pour the honey mixture over the top and stir until everything is evenly coated.
- Spread the mixture out in an even layer on the baking sheet. Bake at 300°F for 40 minutes, stirring gently every 10 minutes.
- Pull it out of the oven and let it cool completely on the pan — don't skip this, it's how it gets crunchy.
- Once cooled, mix in the dried fruit and chocolate chips if using. Store in an airtight container at room temperature for up to a week, or freeze for up to 3 months.
Farris Family Notes
- Dried cranberries work great in place of raisins.
- Coconut oil is a good swap for vegetable oil and adds a nice flavor.
- Maple syrup works well as a honey substitute.
- Don't rush the cooling step — that's what gives it the crunch.
