Homemade Granola

Description: Homemade granola that's great as a snack, on yogurt, or as an ice cream topping. Makes about 7 cups and freezes well.


Ingredients

  • ¼ c. vegetable oil
  • ¼ c. honey
  • 1 tsp vanilla
  • 4 c. old-fashioned oats
  • 1 ½ c. sliced almonds
  • ½ c. packed light brown sugar
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 1 ½ c. raisins or dried cranberries
  • 1 c. miniature chocolate chips (optional)

Instructions

  1. Preheat the oven to 300°F and have a 15x10 rimmed baking sheet ready.
  2. Melt the oil and honey together in a saucepan over low heat, stir to combine, then whisk in the vanilla. Remove from heat.
  3. In a large bowl, mix together the oats, almonds, brown sugar, salt, and cinnamon. Pour the honey mixture over the top and stir until everything is evenly coated.
  4. Spread the mixture out in an even layer on the baking sheet. Bake at 300°F for 40 minutes, stirring gently every 10 minutes.
  5. Pull it out of the oven and let it cool completely on the pan — don't skip this, it's how it gets crunchy.
  6. Once cooled, mix in the dried fruit and chocolate chips if using. Store in an airtight container at room temperature for up to a week, or freeze for up to 3 months.

Farris Family Notes

  • Dried cranberries work great in place of raisins.
  • Coconut oil is a good swap for vegetable oil and adds a nice flavor.
  • Maple syrup works well as a honey substitute.
  • Don't rush the cooling step — that's what gives it the crunch.
