Grilled Cilantro Lime Chicken Skewers

Description: Marinated in honey, lime, cilantro, and soy sauce then grilled on skewers. Easy to make ahead and always a crowd pleaser.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1/4 c. lime juice, freshly-squeezed
- 1/2 c. honey
- 2 Tbsp soy sauce
- 1 Tbsp olive oil
- 2 cloves garlic, minced or pressed
- 1/2 c. cilantro, chopped
- 1/2 tsp salt
- 1/4 tsp pepper

- Cut the chicken into even 1-inch cubes and toss them into a gallon zip-lock bag.
- Whisk together the lime juice, honey, soy sauce, olive oil, garlic, cilantro, salt, and pepper in a bowl.
- Set aside ΒΌ cup of the marinade in a small bowl and refrigerate it for later. Pour the rest into the bag with the chicken, seal it up, and shake to coat.
- Lay the bag flat on a plate to catch any leaks and refrigerate for at least 3 hours, up to 8 hours.
- About 30 minutes before cooking, soak your wooden skewers in water for 20 minutes so they don't catch fire on the grill. Pat them dry before using.
- Thread 3-4 pieces of chicken onto each skewer, leaving about an inch free on each end.
- Preheat the grill to medium-high. Lay the skewers on and cook for 3 minutes.
- Brush the reserved marinade on the uncooked side, then flip. Grill another 3 minutes until cooked through. Don't brush marinade on the already-cooked side to avoid cross contamination.
