Goldfish Chicken

Description: I think this is a family favorite, because it's been made more than a few times when growing up. Baked chicken that is breaded with Goldfish®.


Ingredients

  • 1 egg
  • 3 Tbsp milk
  • 1 c. crushed goldfish crackers
  • ½ c. parmesan cheese
  • 1 tsp oregano
  • ½ tsp paprika
  • ⅛ tsp pepper
  • 2 lbs boneless chicken breasts
  • Cooking spray

Instructions

  1. Spray a 9x13 baking pan with cooking spray.
  2. In a smaller, wide dish, combine the egg and milk. Set aside.
  3. In a shallow dish, mix the crushed goldfish crackers, parmesan cheese, oregano, paprika, and pepper. Set aside.
  4. Rinse the chicken and pat dry.
  5. Dip each piece of chicken in the egg mixture, then coat with the crumb mixture.
  6. Arrange the chicken pieces in the baking pan so they do not touch.
  7. Bake at 375°F for 45-55 minutes.
