Goldfish Chicken

Description: I think this is a family favorite, because it's been made more than a few times when growing up. Baked chicken that is breaded with Goldfish®.
Ingredients
- 1 egg
- 3 Tbsp milk
- 1 c. crushed goldfish crackers
- ½ c. parmesan cheese
- 1 tsp oregano
- ½ tsp paprika
- ⅛ tsp pepper
- 2 lbs boneless chicken breasts
- Cooking spray
Instructions
- Spray a 9x13 baking pan with cooking spray.
- In a smaller, wide dish, combine the egg and milk. Set aside.
- In a shallow dish, mix the crushed goldfish crackers, parmesan cheese, oregano, paprika, and pepper. Set aside.
- Rinse the chicken and pat dry.
- Dip each piece of chicken in the egg mixture, then coat with the crumb mixture.
- Arrange the chicken pieces in the baking pan so they do not touch.
- Bake at 375°F for 45-55 minutes.
