Jambalaya

Description: Though rarely made, is one of Justin's favorites dishes. Hasn't tried this recipe but loves Jambalaya.
Ingredients
- Cooking spray
- 3 Tbsp unsalted butter
- 1 c. chopped onion
- 1 ½ Tbsp minced garlic
- 1 lb smoked sausage, cut in ¼” slices
- 1 lb smoked, low-sodium ham, diced
- 1 lb boneless chicken breasts, cut into bite-size
- 2 bay leaves
- 2 Tbsp cajun seasoning (low-salt)
- 1 tsp gumbo file seasoning
- 1 c. chopped celery
- ½ c. tomato sauce (4 oz)
- 1 can diced tomatoes (12 oz)
- 2 ½ c. chicken broth (20 oz)
- 1 ½ c. uncooked, long-grain rice (non-sticky)
Instructions
- Spray a deep skillet (or dutch oven) with cooking spray.
- Melt butter, and brown the chopped onions and garlic.
- Add sausage and ham, and brown.
- Add chicken, and brown.
- Stir in bay leaves, cajun seasoning, and gumbo file seasoning.
- Add celery, tomato sauce, diced tomatoes, chicken broth, and uncooked rice.
- Bring to a boil, stirring occasionally.
- Reduce heat, cover, and simmer for 30 minutes.
- Uncover, remove bay leaves, and let stand for 5 minutes before serving.
