Jambalaya

Description: Though rarely made, is one of Justin's favorites dishes. Hasn't tried this recipe but loves Jambalaya.


Ingredients

  • Cooking spray
  • 3 Tbsp unsalted butter
  • 1 c. chopped onion
  • 1 ½ Tbsp minced garlic
  • 1 lb smoked sausage, cut in ¼” slices
  • 1 lb smoked, low-sodium ham, diced
  • 1 lb boneless chicken breasts, cut into bite-size
  • 2 bay leaves
  • 2 Tbsp cajun seasoning (low-salt)
  • 1 tsp gumbo file seasoning
  • 1 c. chopped celery
  • ½ c. tomato sauce (4 oz)
  • 1 can diced tomatoes (12 oz)
  • 2 ½ c. chicken broth (20 oz)
  • 1 ½ c. uncooked, long-grain rice (non-sticky)

Instructions

  1. Spray a deep skillet (or dutch oven) with cooking spray.
  2. Melt butter, and brown the chopped onions and garlic.
  3. Add sausage and ham, and brown.
  4. Add chicken, and brown.
  5. Stir in bay leaves, cajun seasoning, and gumbo file seasoning.
  6. Add celery, tomato sauce, diced tomatoes, chicken broth, and uncooked rice.
  7. Bring to a boil, stirring occasionally.
  8. Reduce heat, cover, and simmer for 30 minutes.
  9. Uncover, remove bay leaves, and let stand for 5 minutes before serving.
