Dad's Pasta Salad

Original Source: Dad (Keith) Farris

Servings per Recipe: 6 servings

Description: I remember this as a very good summer lunch or snack, as it was chilled, filling, and very tasty. Mom always made it best. (sorry Dad 😅)

Ingredients

  • 1 pkg tri-color rotini
  • 2 chicken breasts cubed
  • Maple jalapeno seasoning
  • 6 mozzarella sticks, cubed
  • 3 sausages, sliced1
  • 1 italian dressing pkg, dry mix
  • Italian dressing2

Instructions

  1. Cook rotini in boiling water. Drain, place in large bowl, & cool in fridge.3
  2. Cook cubed chicken, season with maple jalapeno seasoning.
  3. In separate pan, cook sausages until heated through. Chill chicken & sausages after cooking.
  4. Cut cheese sticks into bite-size pieces.
  5. Mix cheese stick bites in with noodles, add italian pkg & italian dressing.
  6. Add chicken & sausages when cooled.
  7. Chill in the fridge for 3 hours. ENJOY!

  1. The sausage you want is the mozzarella w/ artichokes & garlic

  2. Olive Garden brand is the best!

  3. When draining noodles, you should also spray cold water over the noodles to stop cooking and chill faster.
