Chicken Scampi

Description: A great family recipe, which was commonly made in the Farris household. An adaptation of the Olive Garden Chicken Scampi. While most enjoy with angel hair pasta, Justin found better enjoyment and consistency from linguine.


Ingredients

Scampi sauce

  • 3 Tbsp butter
  • 2 Tbsp fresh onion
  • 1 Tbsp garlic
  • 1 ½ c. apple juice
  • ½ tsp salt
  • ½ tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • ¼ tsp black pepper
  • 2 tsp parsley
  • 1 c. heavy cream

Pasta and Chicken

  • Angel hair (or linguine) pasta
  • olive oil
  • 2 chicken breasts, thinly sliced strips
  • 2 Assorted color bell pepper, sliced

Instructions

Sauce

  1. In a large saucepan, melt butter, and add in onion and garlic. Sauté for about 30 seconds or until fragrant.
  2. Add apple juice, salt, italian seasoning, crushed red pepper, and pepper. Bring to a low boil and reduce by half.
  3. After reducing, add parsley and heavy cream to the sauce and set aside.

Chicken

While sauce is reducing, you can start the pasta and chicken.

  1. In a large pot, add water and bring to a boil. Cook pasta until al dente. Drain.
  2. While pasta is cooking, in a pan, add olive oil and bring to medium heat. Cook chicken, and then add bell peppers and cook to preferred tenderness.
  3. Once pasta is drained, with chicken and bell peppers ready, combine all into pot, including the finalized sauce. Serve immediately.
