Chicken and Dumplings

Description: Real quick and easy comfort food, if you have an Instant Pot.
Ingredients
Chicken
- 1 Tbsp olive oil
- 1 small onion, chopped
- 2 celery ribs, cut into 1" pieces
- 6 small carrots, cut into 1" pieces
- 2 c. Chicken broth
- 2 lbs boneless skinless chicken breasts
- 2 tsp chicken bullion
- 1 tsp salt
- 1 tsp pepper
- 1 tsp poultry seasoning
Dumplings
- 2 c. buttermilk biscuit mix 2
- ½ c. milk plus another 1 Tbsp milk (as needed)
- 1 tsp parsley
Instructions
- Set the Instant Pot to the Sauté function and heat with olive oil.
- Add the onion, celery, and carrots to the pot and sauté for 3 to 5 minutes.
- Pour in the broth and scrape the bottom of the inner pot with a wooden spoon or spatula to deglaze. Press Cancel.
- Add the chicken, bullion, salt, pepper, and poultry seasoning.
- Combine the dumpling ingredients in a bowl until just moistened. Drop 2-Tbsp mounds in the contents of the inner pot, as evenly spaced as possible.
- Secure the lid and set the vent to sealing. Manually set the cook time for 3 minutes.
- When the cook time is over, manually release the pressure. Serve while hot.
