Chicken and Dumplings

Description: Real quick and easy comfort food, if you have an Instant Pot.


Ingredients

Chicken

  • 1 Tbsp olive oil
  • 1 small onion, chopped
  • 2 celery ribs, cut into 1" pieces
  • 6 small carrots, cut into 1" pieces
  • 2 c. Chicken broth
  • 2 lbs boneless skinless chicken breasts
  • 2 tsp chicken bullion
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp poultry seasoning

Dumplings

  • 2 c. buttermilk biscuit mix 2
  • ½ c. milk plus another 1 Tbsp milk (as needed)
  • 1 tsp parsley

Instructions

  1. Set the Instant Pot to the Sauté function and heat with olive oil.
  2. Add the onion, celery, and carrots to the pot and sauté for 3 to 5 minutes.
  3. Pour in the broth and scrape the bottom of the inner pot with a wooden spoon or spatula to deglaze. Press Cancel.
  4. Add the chicken, bullion, salt, pepper, and poultry seasoning.
  5. Combine the dumpling ingredients in a bowl until just moistened. Drop 2-Tbsp mounds in the contents of the inner pot, as evenly spaced as possible.
  6. Secure the lid and set the vent to sealing. Manually set the cook time for 3 minutes.
  7. When the cook time is over, manually release the pressure. Serve while hot.
