Cajun Chicken Noodle Soup

Description: Best Cajun Chicken Noodle Soup! Always helped when having a cold and enjoyable all year round.
Ingredients
- 1 tsp extra-virgin olive oil
- 1 lb chicken breasts
- Salt
- 2 tsp minced garlic
- ¼ onion, diced
- 2 celery stalks, cut into ¼” slices
- 1 Tbsp cajun seasoning (Creole)
- ½ tsp garlic powder
- ½ tsp paprika
- 1 Tbsp of lemon juice (more if you desire)
- 64 oz low-sodium chicken broth
- Some parsley
Instructions
- In a large pot, warm olive oil over medium heat. Season chicken with salt & cook until golden brown, about 5 minutes per side.
- Transfer to a cutting board to cool & chop into ½” cubes.
- Return pot to medium heat and add drizzle of olive oil, garlic, & onions. Cook until softened, 4-5 minutes.
- Add celery, cajun seasoning, garlic powder, paprika, and salt. Cook 3-4 minutes.
- Add lemon juice & chicken broth (or 10 cups of water & 10 chicken bullion cubes), and desired amount of water. Bring soup to a boil.
- Add pasta & cook until tender. Stir in chicken & let it heat til chicken is warmed throughout.
- Sprinkle with parsley before serving. Serve immediately.
