Cajun Chicken Noodle Soup

Description: Best Cajun Chicken Noodle Soup! Always helped when having a cold and enjoyable all year round.


Ingredients

  • 1 tsp extra-virgin olive oil
  • 1 lb chicken breasts
  • Salt
  • 2 tsp minced garlic
  • ¼ onion, diced
  • 2 celery stalks, cut into ¼” slices
  • 1 Tbsp cajun seasoning (Creole)
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 Tbsp of lemon juice (more if you desire)
  • 64 oz low-sodium chicken broth
  • Some parsley

Instructions

  1. In a large pot, warm olive oil over medium heat. Season chicken with salt & cook until golden brown, about 5 minutes per side.
  2. Transfer to a cutting board to cool & chop into ½” cubes.
  3. Return pot to medium heat and add drizzle of olive oil, garlic, & onions. Cook until softened, 4-5 minutes.
  4. Add celery, cajun seasoning, garlic powder, paprika, and salt. Cook 3-4 minutes.
  5. Add lemon juice & chicken broth (or 10 cups of water & 10 chicken bullion cubes), and desired amount of water. Bring soup to a boil.
  6. Add pasta & cook until tender. Stir in chicken & let it heat til chicken is warmed throughout.
  7. Sprinkle with parsley before serving. Serve immediately.
